It is most commonly used as an alternative to gelatin as it has a vegetarian source and is physically similar to gelatin. It also acts as a replacement for gluten in gluten-free food products. It is also used as a thickening agent, coating polymer, binder and bio-adhesive in pharmaceutical, food and industrial sectors.
