Hydroxypropyl methylcellulose (HPMC), commonly known as hypromellose, refers to a semi-synthetic polymer produced from the synthetic modification of alkali cellulose by treating wood pulp with sodium hydroxide solution. It is inert, viscoelastic, colorless and is available in gel, jelly and solution forms. In the food industry, it is used as a substitute for gelatin in vegan food products and to modify the textures of baked products. Apart from this, it is used as a lubricating agent for dry eyes and various ophthalmic procedures. HPMC exhibits immense stability with acids and bases and also has high-water retaining capacity.
